摩洛哥萨鲁克 Zaalouk

Hi, everybody! My name is Fish. I’m 12 years old and I come from Morocco. Do you know where Morocco is? I’ll give you three seconds to think, 3, 2, 1!

Alright, let me tell you. Morocco is in the north of Africa, and it is a very beautiful country and I hope you have an opportunity to visit it.


我今天给你们介绍一道我最喜欢吃的小吃——萨鲁克(zaalouk)。

Today, I will introduce to you my favorite Moroccan snack, zaalouk.


先把茄子切片,裹上香浓的酱料和面糊油,放油锅里煎炸。你是不是觉得有点儿麻烦?对我来说,一点儿也不,因为我只是在街边买已经炸好了的。在摩洛哥的街头很容易看到这样的小吃摊。我和朋友一有钱就冲去买萨鲁克,然后大家一起分享。

First, you slice an eggplant, dip it in a fragrant sauce and frying batter, put it in the pan and fry it. Does it sound complicated? For me, it is not complicated whatsoever, because I just buy them on the street. It's easy to find food stalls like selling zaalouk on the streets of Morocco. When my and my friends get some money, we rush out to buy zaalouk and share it with each other.


买的时候,摊主会给炸好的茄子加上很多香料,搅拌均匀。我也不太清楚其中具体包括了哪些香料,不过我知道里面有大蒜。因为大蒜和茄子是人人都知道的绝配啊!

When you go to buy it, the stall holder will add lots of spices to the ready fried eggplant and coat it well. I'm not sure exactly what the spices are, but I do know it has garlic, because garlic and eggplant are known to go together perfectly.


我还喜欢浇上一勺番茄酱~~哇,别提多香啦~~

I also like to like to drizzle some tomato sauce on my zaalouk, you have no idea how good it tastes!


有时候妈妈也会买萨鲁克回家,搭配面包食用。在我看来,这是世界上最好吃的食物。

Sometimes, my mom will also bring home zaalouk for me, then I eat them with bread. In my opinion, this is the best food in the world.

中国的街头也有一道非常有名的小吃叫臭豆腐。臭,就是不好闻的味道。这就是臭豆腐的特点:闻起来臭,吃起来香。

On the streets in China, there is a famous snack called "stinky tofu". Yes, stinky, as in having a bad smell. This is what makes stinky tofu special — smells bad, but tastes good.


准备好的豆腐干下到油锅里炸到金黄,就有一种很特别的臭味弥漫开来。当然对于喜欢的人来说,这种味道可是非常“香”的。

When the dry tofu is lowered down in the oil and fried, it releases a very special stench. Of course, for those who like stinky tofu, this stench does not smell bad at all.


豆腐干的表面起泡泡,颜色也慢慢变成灰黑色。然后刷上调味酱。说起调味酱,真是各家有各家的秘方,一般来说有辣椒酱、芝麻酱、甜辣酱,再拌以蒜汁、香菜、小葱、姜末等等。

During cooking, small bubbles form on the surface of the tofu, and its color slowly turns darker. After the cooking is done, sauces and spices are added to the tofu. All places will have their own secret recipes and variants for these sauces, such as spicy sauces, sesame sauces and sweet and spicy sauces. After this, garlic, ginger, cilantro and spring onions are added.


臭豆腐要趁热食之,外脆里酥,味道独特。

Stinky tofu should be eaten while it is still hot and the outside is still crispy. There is nothing like it.
